Ingredients 

Salad Ingredients

  • 2 cups Shredded Chicken cooked
  • 4 cups Mixed Greens
  • 1 cup Shredded Carrots
  • 1 cup Sliced Cucumber
  • ¼ cup Chopped Cilantro

Peanut Dressing Ingredients

  • ¼ cup Peanut Butter creamy
  • 2 tablespoon Soy Sauce low sodium
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Sesame Oil
  • 1 clove Garlic minced
  • 1 teaspoon Ginger grated
  • ¼ cup Water as needed

Instructions 

  1. In a large mixing bowl, combine the shredded chicken, mixed greens, shredded carrots, sliced cucumber, and chopped cilantro.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. Add water gradually until the dressing reaches your desired consistency.
  3. Pour the peanut dressing over the salad and toss to combine.
  4. Serve immediately and enjoy!
