Ingredients 

Marinade

  • 1 cup Coconut milk
  • 2 tablespoon Soy sauce
  • 2 tablespoon Brown sugar
  • 1 tablespoon Curry powder
  • 1 lb Chicken breast, cut into strips

Peanut Sauce

  • ½ cup Peanut butter
  • ½ cup Coconut milk
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Brown sugar
  • 1 teaspoon Red curry paste

Instructions 

  1. 1. In a bowl, mix coconut milk, soy sauce, brown sugar, and curry powder. Add chicken strips and marinate for at least 30 minutes.
  2. 2. Thread marinated chicken onto skewers.
  3. 3. Grill chicken skewers over medium heat for 10 minutes, turning occasionally, until cooked through.
  4. 4. For the peanut sauce, mix peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red curry paste in a bowl until smooth.
  5. 5. Serve grilled chicken skewers with peanut sauce on the side.
