Ingredients 

Main Ingredients

  • 1 lb Chicken breast, diced
  • 2 cups Chicken broth
  • 1 cup Coconut milk
  • 1 Red bell pepper, sliced
  • 1 Carrot, sliced
  • 1 Zucchini, sliced
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Sugar
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 2 tablespoon Fresh cilantro, chopped for garnish

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and cook the chicken until browned.
  2. 2. Add the red curry paste and cook for another minute.
  3. 3. Pour in the chicken broth and coconut milk. Bring to a simmer.
  4. 4. Add the bell pepper, carrot, and zucchini. Cook until the vegetables are tender.
  5. 5. Stir in the fish sauce, lime juice, sugar, salt, and pepper. Adjust seasoning to taste.
  6. 6. Serve hot, garnished with fresh cilantro.
