Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 1 can Chickpeas, drained and rinsed
  • 1 cup Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 cup Spinach, chopped
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic and grated ginger, cook for another minute.
  3. Stir in the red curry paste and cook for another minute.
  4. Add the coconut milk, chickpeas, vegetable broth, and soy sauce. Bring to a simmer and cook for 20 minutes.
  5. Stir in the lime juice and chopped spinach. Cook until the spinach is wilted. Season with salt and pepper to taste.
