Ingredients 

Salad Ingredients

  • 2 cups Chickpeas cooked or canned, drained and rinsed
  • 1 cup Cucumber diced
  • 1 cup Red Bell Pepper diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Cilantro chopped
  • 1 tablespoon Peanut Butter
  • 2 tablespoons Soy Sauce low sodium
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Honey
  • 1 teaspoon Sesame Oil
  • 1 clove Garlic minced

Instructions 

  1. In a large mixing bowl, combine chickpeas, cucumber, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, and minced garlic until smooth.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
