Ingredients

  • 2 pounds clams cleaned
  • 1 cup coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 piece ginger 1-inch, minced
  • 1 handful cilantro chopped

Instructions 

  1. 1. Heat a large pot over medium heat. Add the red curry paste and cook for 1 minute.
  2. 2. Add the garlic and ginger, and cook for another minute.
  3. 3. Pour in the coconut milk, fish sauce, and lime juice. Stir well to combine.
  4. 4. Add the clams to the pot. Cover and cook for 5-7 minutes, or until the clams have opened.
  5. 5. Discard any clams that do not open. Stir in the chopped cilantro.
  6. 6. Serve hot with rice or crusty bread.
