Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 can coconut milk
  • 2 tablespoon red curry paste
  • 1 cup chicken broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers, sliced
  • 1 cup snap peas
  • 1 lime, juiced
  • 1 handful fresh cilantro, chopped

Instructions 

  1. Heat the oil in a large pan over medium heat. Add the onion and cook until softened.
  2. Add the garlic and cook for another minute.
  3. Add the chicken and cook until browned on all sides.
  4. Stir in the red curry paste and cook for another minute.
  5. Pour in the coconut milk and chicken broth. Bring to a simmer.
  6. Add the fish sauce, brown sugar, bell peppers, and snap peas. Cook until the vegetables are tender.
  7. Stir in the lime juice and fresh cilantro before serving.
