Thai Coconut Curry Crockpot Recipe
A delicious and easy Thai coconut curry made in a crockpot.

Main Ingredients
- 2 cups Coconut milk
- 1 tablespoon Red curry paste
- 1 lb Chicken breast, diced
- 2 cups Vegetables (bell peppers, carrots, etc.)
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 1 teaspoon Ginger, minced
- 2 cloves Garlic, minced
- 1 cup Chicken broth
- 1 tablespoon Lime juice
- 1 cup Fresh basil, chopped
- 1. Add coconut milk, red curry paste, chicken, vegetables, fish sauce, brown sugar, ginger, garlic, and chicken broth to the crockpot. 
- 2. Stir to combine. 
- 3. Cook on low for 4 hours or until chicken is cooked through and vegetables are tender. 
- 4. Stir in lime juice and fresh basil before serving.
