Thai Coconut Curry Crockpot Recipe

Main Ingredients
- 2 cups Coconut milk
- 1 tablespoon Red curry paste
- 1 lb Chicken breast, diced
- 2 cups Vegetables (bell peppers, carrots, etc.)
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 1 teaspoon Ginger, minced
- 2 cloves Garlic, minced
- 1 cup Chicken broth
- 1 tablespoon Lime juice
- 1 cup Fresh basil, chopped
1. Add coconut milk, red curry paste, chicken, vegetables, fish sauce, brown sugar, ginger, garlic, and chicken broth to the crockpot.
2. Stir to combine.
3. Cook on low for 4 hours or until chicken is cooked through and vegetables are tender.
4. Stir in lime juice and fresh basil before serving.
