Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 1 tablespoon Vegetable oil
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Red curry paste
  • 400 ml Coconut milk
  • 1 cup Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 cup Mixed vegetables (e.g., bell peppers, carrots, snap peas) sliced
  • 1 handful Fresh cilantro chopped

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a large pot, heat the vegetable oil over medium heat. Add the garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. 3. Stir in the red curry paste and cook for another minute.
  4. 4. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  5. 5. Add the soy sauce, lime juice, and mixed vegetables. Cook for 5-7 minutes until the vegetables are tender.
  6. 6. Add the cooked rice noodles to the pot and toss to coat in the sauce. Cook for another 2-3 minutes until heated through.
  7. 7. Serve hot, garnished with fresh cilantro.
