Ingredients

  • 1 lb white fish fillets cut into chunks
  • 1 can coconut milk
  • 2 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 lime juiced
  • 1 red bell pepper sliced
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 cup fresh cilantro chopped

Instructions 

  1. 1. Heat a large pan over medium heat. Add a bit of oil.
  2. 2. Add the onion, garlic, and ginger. Cook until fragrant.
  3. 3. Stir in the red curry paste and cook for another minute.
  4. 4. Pour in the coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  5. 5. Add the fish chunks and red bell pepper. Cook until the fish is cooked through.
  6. 6. Stir in the lime juice and chopped cilantro. Serve hot.
