Ingredients

  • 4 fillets white fish such as cod or tilapia
  • 1 can coconut milk full-fat
  • 2 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers sliced
  • 1 cup snap peas
  • 1 tablespoon lime juice freshly squeezed
  • 2 tablespoon cilantro chopped

Instructions 

  1. 1. In a skillet, heat a bit of oil over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant.
  2. 2. Pour in the coconut milk, fish sauce, and brown sugar. Stir to combine.
  3. 3. Add the fish fillets to the skillet. Cook for 5-7 minutes on each side, or until the fish is cooked through.
  4. 4. Add the bell peppers and snap peas. Cook for another 3-4 minutes until the vegetables are tender.
  5. 5. Stir in the lime juice and sprinkle with chopped cilantro before serving.
