Thai Coconut Fried Rice

Main Ingredients
- 2 cups Cooked Jasmine Rice
- 1 cup Coconut Milk
- 2 tablespoon Vegetable Oil
- 1 cup Mixed Vegetables (carrots, peas, corn)
- 2 cloves Garlic, minced
- 1 tablespoon Soy Sauce
- 1 tablespoon Fish Sauce
- 1 teaspoon Sugar
- 1 teaspoon Salt
- 2 tablespoon Chopped Fresh Cilantro
Heat the vegetable oil in a wok over medium heat.
Add the minced garlic and stir-fry until fragrant.
Add the mixed vegetables and cook for 3-4 minutes.
Stir in the cooked jasmine rice and mix well.
Pour in the coconut milk, soy sauce, fish sauce, sugar, and salt. Stir to combine.
Cook for another 5-7 minutes, stirring occasionally.
Garnish with chopped fresh cilantro before serving.
