Ingredients 

Main Ingredients

  • 1 cup red lentils rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon red curry paste
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 lime juiced
  • 1 cup spinach fresh
  • to taste salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the garlic, ginger, and red curry paste. Cook for another 2 minutes.
  4. Add the red lentils, coconut milk, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. Stir in the soy sauce, lime juice, and spinach. Cook until spinach is wilted.
  7. Season with salt and pepper to taste. Serve hot.
