Instructions
1. Heat the olive oil in a pan over medium heat.
2. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
3. Stir in the red curry paste and cook for another minute.
4. Pour in the coconut milk, fish sauce, lime juice, and sugar. Stir well to combine.
5. Add the cod fillets to the pan, spoon some sauce over the top of each fillet.
6. Cover and cook for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.
7. Garnish with chopped cilantro before serving.
