Ingredients 

Main Ingredients

  • 4 fillets Cod about 6 oz each
  • 2 tablespoon Olive oil
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice freshly squeezed
  • 1 teaspoon Sugar
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 handful Fresh cilantro chopped

Instructions 

  1. 1. Heat the olive oil in a pan over medium heat.
  2. 2. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. 3. Stir in the red curry paste and cook for another minute.
  4. 4. Pour in the coconut milk, fish sauce, lime juice, and sugar. Stir well to combine.
  5. 5. Add the cod fillets to the pan, spoon some sauce over the top of each fillet.
  6. 6. Cover and cook for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.
  7. 7. Garnish with chopped cilantro before serving.
