Thai Corn Fritters Recipe

Main Ingredients
- 2 cups Corn kernels fresh or frozen
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 2 tablespoon Red curry paste
- 1 cup Coconut milk
- 2 tablespoon Chopped cilantro
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 1 cup Vegetable oil for frying
In a mixing bowl, combine corn, flour, baking powder, red curry paste, coconut milk, cilantro, salt, and sugar. Mix well.
Heat oil in a frying pan over medium heat.
Scoop spoonfuls of the mixture into the pan, flattening slightly. Fry until golden brown on both sides.
Drain on paper towels and serve hot.
