Main Ingredients
- 2 cups Corn kernels fresh or frozen
- 1 Red bell pepper diced
- 1 Cucumber diced
- ¼ cup Red onion finely chopped
- ¼ cup Cilantro chopped
- 1 Lime juiced
- 1 tablespoon Fish sauce
- 1 tablespoon Soy sauce
- 1 teaspoon Sugar
- 1 Chili finely chopped, optional
In a large mixing bowl, combine the corn, red bell pepper, cucumber, red onion, and cilantro.
In a small bowl, whisk together the lime juice, fish sauce, soy sauce, and sugar until the sugar is dissolved.
Pour the dressing over the salad and toss to combine.
Add the chopped chili if using, and toss again.
Serve immediately or refrigerate for up to 2 hours before serving.
