  • ¼ cup red onion, thinly sliced
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon fresh cilantro, chopped

Instructions 

  1. In a mixing bowl, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.
  2. Add the cucumber and red onion to the bowl. Toss to coat evenly with the vinegar mixture.
  3. Sprinkle with chopped cilantro before serving.
