  • 2 cups Coconut milk
  • 1 tablespoon Red curry paste
  • 1 cup Vegetable broth
  • 1 Bell pepper, sliced
  • 1 Carrot, sliced
  • 1 cup Broccoli florets
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 2 cups Cooked rice

Instructions 

  1. 1. Heat the large pot over medium heat.
  2. 2. Add the coconut milk and red curry paste. Stir well.
  3. 3. Pour in the vegetable broth and bring to a simmer.
  4. 4. Add the bell pepper, carrot, and broccoli. Cook until tender.
  5. 5. Stir in the soy sauce and sugar. Adjust seasoning as needed.
  6. 6. Serve over cooked rice.
