Ingredients 

Main Ingredients

  • 1 cup Red Lentils rinsed
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 tablespoon Thai Red Curry Paste
  • 1 can Coconut Milk 400 ml
  • 2 cups Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 cup Spinach fresh
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger, and cook for another minute.
  4. Stir in the Thai red curry paste and cook for another 2 minutes.
  5. Add the rinsed red lentils, coconut milk, and vegetable broth. Bring to a boil.
  6. Reduce the heat and let it simmer for about 20 minutes, or until the lentils are tender.
  7. Stir in the soy sauce, lime juice, and fresh spinach. Cook until the spinach is wilted.
  8. Season with salt and black pepper to taste. Serve hot.
