Ingredients 

Main Ingredients

  • 200 g rice noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 1 cup coconut milk
  • 2 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 cup vegetables mixed, chopped
  • 1 cup chicken cooked, shredded
  • 1 tablespoon brown sugar
  • 1 handful fresh cilantro chopped

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a large pan, heat the vegetable oil over medium heat. Add the garlic and ginger, and sauté until fragrant.
  3. 3. Stir in the red curry paste and cook for another minute.
  4. 4. Add the coconut milk, soy sauce, fish sauce, lime juice, and brown sugar. Bring to a simmer.
  5. 5. Add the mixed vegetables and cooked chicken. Cook until the vegetables are tender.
  6. 6. Toss the cooked noodles in the sauce until well coated.
  7. 7. Serve hot, garnished with fresh cilantro.
