Ingredients 

Main Ingredients

  • 1 lb scallops cleaned and patted dry
  • 1 tablespoon vegetable oil
  • 2 tablespoon red curry paste
  • 1 can coconut milk 13.5 oz
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup bell peppers sliced
  • 1 cup snap peas
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon cilantro chopped, for garnish

Instructions 

  1. Heat the oil in a skillet over medium-high heat. Add the scallops and cook until golden brown, about 2-3 minutes per side. Remove and set aside.
  2. In the same skillet, add the red curry paste and cook for 1 minute. Stir in the coconut milk, fish sauce, and brown sugar. Bring to a simmer.
  3. Add the bell peppers and snap peas. Cook until tender, about 5 minutes.
  4. Return the scallops to the skillet and cook for another 2 minutes. Stir in the lime juice.
  5. Garnish with chopped cilantro and serve hot.
