Ingredients 

Curry Paste

  • 2 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 1 cup Vegetables (mixed, chopped)
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Lime Juice
  • 1 handful Fresh Basil Leaves

Instructions 

  1. Heat the saucepan over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant.
  2. Pour in the coconut milk and bring to a simmer.
  3. Add the mixed vegetables and cook for 10-15 minutes until tender.
  4. Stir in the fish sauce, sugar, and lime juice. Cook for another 2-3 minutes.
  5. Remove from heat and stir in the fresh basil leaves. Serve warm.
