  • 1 cup Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 cup Vegetables (carrots, bell peppers, etc.) chopped
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 handful Fresh Basil chopped

Instructions 

  1. 1. Heat the saucepan over medium heat.
  2. 2. Add the red curry paste and stir for 1-2 minutes.
  3. 3. Pour in the coconut milk and bring to a simmer.
  4. 4. Add the chopped vegetables and cook until tender.
  5. 5. Stir in the fish sauce, sugar, and lime juice.
  6. 6. Remove from heat and garnish with fresh basil.
