Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon Thai red curry paste
  • 2 sweet potatoes, peeled and diced
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 can coconut milk
  • to taste salt and pepper
  • 1 lime, juiced
  • ¼ cup fresh cilantro, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the garlic and ginger, cook for another 2 minutes.
  4. Stir in the Thai red curry paste and cook for 1 minute.
  5. Add the sweet potatoes, red lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the coconut milk and cook for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Remove from heat and stir in lime juice and fresh cilantro.
  9. Serve hot and enjoy!
