Thai Curry Sweet Potato Lentil Soup

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoon Thai red curry paste
- 2 sweet potatoes, peeled and diced
- 1 cup red lentils
- 4 cups vegetable broth
- 1 can coconut milk
- to taste salt and pepper
- 1 lime, juiced
- ¼ cup fresh cilantro, chopped
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent, about 5 minutes.
Add the garlic and ginger, cook for another 2 minutes.
Stir in the Thai red curry paste and cook for 1 minute.
Add the sweet potatoes, red lentils, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in the coconut milk and cook for another 5 minutes.
Season with salt and pepper to taste.
Remove from heat and stir in lime juice and fresh cilantro.
Serve hot and enjoy!
