Thai Fried Rice Pineapple Recipe

Main Ingredients
- 2 cups Cooked Jasmine Rice preferably day-old
- 1 cup Pineapple diced
- 2 tablespoon Vegetable Oil
- 1 cup Mixed Vegetables carrots, peas, and corn
- 2 cloves Garlic minced
- 2 tablespoon Soy Sauce
- 1 tablespoon Fish Sauce
- 1 teaspoon Sugar
- 2 tablespoon Green Onions chopped
- 1 handful Cilantro chopped
- 0.5 cup Cashews optional, toasted
1. Heat the vegetable oil in a wok over medium-high heat.
2. Add the minced garlic and stir-fry until fragrant.
3. Add the mixed vegetables and cook until tender.
4. Stir in the cooked jasmine rice, breaking up any clumps.
5. Add the diced pineapple and cook for another 2-3 minutes.
6. Pour in the soy sauce, fish sauce, and sugar. Mix well.
7. Stir in the green onions and cilantro. Cook for another minute.
8. Serve hot, garnished with toasted cashews if using.
