Ingredients 

Main Ingredients

  • 2 cups Cooked rice preferably day-old
  • 2 tablespoon Vegetable oil
  • 1 Onion chopped
  • 2 Garlic cloves minced
  • 2 Tomatoes chopped
  • 2 tablespoon Soy sauce
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 2 Eggs beaten
  • 1 cup Green onions chopped
  • 1 Lime cut into wedges

Instructions 

  1. Heat oil in a wok over medium-high heat.
  2. Add chopped onion and minced garlic, stir-fry until fragrant.
  3. Add chopped tomatoes and cook until soft.
  4. Push the vegetables to one side of the wok and pour in the beaten eggs. Scramble the eggs until cooked.
  5. Add the cooked rice, soy sauce, fish sauce, and sugar. Stir-fry everything together until well combined and heated through.
  6. Stir in chopped green onions and cook for another minute.
  7. Serve hot with lime wedges on the side.
