Ingredients 

Main Ingredients

  • 200 g Glass noodles
  • 1 Carrot, julienned
  • 1 Cucumber, julienned
  • 1 Red bell pepper, thinly sliced
  • ¼ cup Fresh cilantro, chopped
  • ¼ cup Fresh mint, chopped
  • ¼ cup Roasted peanuts, chopped

Dressing

  • 3 tablespoon Lime juice
  • 2 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sugar
  • 1 clove Garlic, minced
  • 1 Red chili, thinly sliced optional

Instructions 

  1. 1. Cook the glass noodles according to package instructions. Drain and rinse with cold water.
  2. 2. In a large mixing bowl, combine the cooked noodles, carrot, cucumber, red bell pepper, cilantro, mint, and peanuts.
  3. 3. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, sugar, garlic, and red chili (if using).
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or chill in the fridge for 15 minutes before serving.
