Ingredients 

Main Ingredients

  • 100 g glass noodles
  • 200 g chicken breast, thinly sliced
  • 1 liter chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 cup mushrooms, sliced
  • 1 cup baby spinach
  • 0.5 cup carrots, julienned
  • 0.5 cup green onions, chopped
  • 0.25 cup cilantro, chopped
  • 1 lime, cut into wedges
  • Salt and pepper to taste

Instructions 

  1. Soak glass noodles in warm water for 10 minutes, then drain.
  2. In a pot, bring chicken broth to a boil.
  3. Add garlic, chicken, fish sauce, soy sauce, and sugar. Cook for 5 minutes.
  4. Add mushrooms, carrots, and soaked noodles. Cook for another 5 minutes.
  5. Add spinach and green onions. Cook for 2 minutes.
  6. Season with salt and pepper.
  7. Serve hot, garnished with cilantro and lime wedges.
