Thai Glass Noodle Soup
A light and flavorful Thai soup with glass noodles, chicken, and fresh vegetables.

Main Ingredients
- 100 g glass noodles
- 200 g chicken breast, thinly sliced
- 1 liter chicken broth
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 cup mushrooms, sliced
- 1 cup baby spinach
- 0.5 cup carrots, julienned
- 0.5 cup green onions, chopped
- 0.25 cup cilantro, chopped
- 1 lime, cut into wedges
- Salt and pepper to taste
Soak glass noodles in warm water for 10 minutes, then drain.
In a pot, bring chicken broth to a boil.
Add garlic, chicken, fish sauce, soy sauce, and sugar. Cook for 5 minutes.
Add mushrooms, carrots, and soaked noodles. Cook for another 5 minutes.
Add spinach and green onions. Cook for 2 minutes.
Season with salt and pepper.
Serve hot, garnished with cilantro and lime wedges.
