Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup green curry paste
  • 1 lb chicken breast, thinly sliced
  • 2 cups coconut milk
  • 3 cups chicken broth
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup fresh basil leaves
  • 1 cup fresh cilantro leaves
  • 1 tablespoon lime juice

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Add the chicken slices and cook until no longer pink.
  4. Pour in the coconut milk and chicken broth, bring to a simmer.
  5. Add the mushrooms and bell peppers, cook for 5-7 minutes until tender.
  6. Stir in the fish sauce, brown sugar, basil, cilantro, and lime juice.
  7. Simmer for another 5 minutes, then serve hot.
