Main Ingredients
- 1 tablespoon vegetable oil
- 1 cup green curry paste
- 1 lb chicken breast, thinly sliced
- 2 cups coconut milk
- 3 cups chicken broth
- 1 cup sliced mushrooms
- 1 cup sliced bell peppers
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup fresh basil leaves
- 1 cup fresh cilantro leaves
- 1 tablespoon lime juice
Heat the vegetable oil in a large pot over medium heat.
Add the green curry paste and cook for 1-2 minutes until fragrant.
Add the chicken slices and cook until no longer pink.
Pour in the coconut milk and chicken broth, bring to a simmer.
Add the mushrooms and bell peppers, cook for 5-7 minutes until tender.
Stir in the fish sauce, brown sugar, basil, cilantro, and lime juice.
Simmer for another 5 minutes, then serve hot.
