  • 2 tablespoon Green Curry Paste
  • 1 can Coconut Milk
  • 2 cups Chicken Broth
  • 1 cup Sliced Chicken Breast
  • 1 cup Sliced Bell Peppers
  • 1 cup Sliced Mushrooms
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 cup Basil Leaves
  • 1 cup Cilantro
  • 1 tablespoon Lime Juice

Instructions 

  1. 1. Heat the large pot over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.
  2. 2. Pour in the coconut milk and chicken broth. Stir well to combine.
  3. 3. Add the sliced chicken breast, bell peppers, and mushrooms. Simmer for 15-20 minutes until the chicken is cooked through.
  4. 4. Stir in the fish sauce, brown sugar, basil leaves, cilantro, and lime juice. Cook for another 5 minutes.
  5. 5. Serve hot, garnished with additional basil or cilantro if desired.
