Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 cup onion, chopped
  • 1 cup bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon green curry paste
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 cup tofu, cubed
  • 1 cup broccoli florets
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup fresh basil leaves

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and bell pepper, and cook until softened.
  3. Add the garlic and ginger, and cook for another minute.
  4. Stir in the green curry paste and cook for another minute.
  5. Add the coconut milk and vegetable broth, and bring to a simmer.
  6. Add the tofu and broccoli, and cook until the broccoli is tender.
  7. Stir in the soy sauce and lime juice.
  8. Remove from heat and stir in the basil leaves.
  9. Serve hot with rice.
