Thai Green Curry Vegetables

Main Ingredients
- 1 tablespoon Vegetable Oil
- 2 tablespoon Green Curry Paste
- 1 can Coconut Milk 400ml
- 1 cup Broccoli Florets
- 1 cup Sliced Carrots
- 1 cup Sliced Bell Peppers
- 1 cup Snow Peas
- 1 tablespoon Soy Sauce
- 1 teaspoon Sugar
- 1 handful Fresh Basil Leaves
Heat the vegetable oil in a large pan over medium heat.
Add the green curry paste and cook for 1-2 minutes until fragrant.
Pour in the coconut milk and bring to a simmer.
Add the broccoli, carrots, bell peppers, and snow peas. Cook for 5-7 minutes until the vegetables are tender.
Stir in the soy sauce and sugar. Cook for another 2 minutes.
Remove from heat and stir in the fresh basil leaves.
Serve hot with steamed rice.
