Ingredients 

Main Ingredients

  • 500 g Lamb, cubed
  • 1 can Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Lime, juiced
  • 1 handful Fresh Basil Leaves

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and sauté the onions until translucent.
  2. 2. Add the garlic and red curry paste. Cook for another minute until fragrant.
  3. 3. Add the lamb cubes and cook until browned on all sides.
  4. 4. Pour in the coconut milk, fish sauce, and sugar. Stir well to combine.
  5. 5. Add the sliced bell peppers. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the lamb is tender.
  6. 6. Stir in the lime juice and fresh basil leaves just before serving.
