Thai Lamb Curry With Coconut Milk Recipe

Main Ingredients
- 500 g Lamb, cut into cubes
- 1 can Coconut milk
- 2 tablespoon Red curry paste
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 1 Red bell pepper, sliced
- 1 Green bell pepper, sliced
- 1 cup Basil leaves
Heat a large pot over medium heat. Add a bit of oil and cook the onion until translucent.
Add the garlic and red curry paste. Cook for another minute until fragrant.
Add the lamb and cook until browned on all sides.
Pour in the coconut milk, fish sauce, and brown sugar. Stir well.
Bring to a boil, then reduce heat and let it simmer for about 45 minutes, until the lamb is tender.
Add the bell peppers and cook for another 10 minutes.
Stir in the basil leaves just before serving.
