Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 carrot, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and grated ginger. Sauté until fragrant.
  3. Stir in red curry paste and cook for another minute.
  4. Add red lentils, vegetable broth, and coconut milk. Bring to a boil.
  5. Add sliced carrot and chopped red bell pepper. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. Stir in soy sauce and lime juice. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
