Ingredients

  • 1 cup jasmine rice
  • 1.5 cups water
  • 0.5 cup coconut milk
  • 0.25 cup lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 2 tablespoons chopped cilantro

Instructions 

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice, water, and coconut milk. Bring to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes.
  5. Fluff the rice with a fork and stir in the lime juice, lime zest, sugar, salt, and chopped cilantro.
