Ingredients 

Main Ingredients

  • 2 lbs Lobster cleaned and cut into pieces
  • 1 can Coconut milk 400ml
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Bell peppers sliced
  • 1 cup Basil leaves fresh
  • 1 cup Cherry tomatoes halved
  • 1 tablespoon Lime juice freshly squeezed

Instructions 

  1. 1. Heat the pot over medium heat and add the red curry paste. Cook for 1-2 minutes until fragrant.
  2. 2. Add the coconut milk and bring to a simmer.
  3. 3. Add the lobster pieces and cook for 5-7 minutes until they turn opaque.
  4. 4. Stir in the fish sauce, brown sugar, bell peppers, and cherry tomatoes. Cook for another 5 minutes.
  5. 5. Add the basil leaves and lime juice. Stir well and cook for another minute.
  6. 6. Serve hot with steamed rice.
