Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup coconut milk
  • 1 cup mango puree
  • 2 tablespoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 lime, juiced
  • 1 cup fresh cilantro, chopped for garnish

Instructions 

  1. Heat the oil in a large pan over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
  2. Add the onion, garlic, and ginger to the pan. Cook until the onion is soft, about 3-4 minutes.
  3. Stir in the coconut milk, mango puree, curry powder, salt, and sugar. Bring to a simmer and cook for 10-15 minutes, until the sauce thickens.
  4. Stir in the lime juice and cook for another 2 minutes.
  5. Garnish with fresh cilantro and serve hot with rice or naan.
