- 2 tablespoon Vegetable Oil
- 1 lb Chicken Thighs, cut into chunks
- 1 cup Coconut Milk
- 2 tablespoon Massaman Curry Paste
- 1 cup Chicken Broth
- 2 tablespoon Fish Sauce
- 1 tablespoon Brown Sugar
- 2 cups Potatoes, peeled and cubed
- 1 cup Carrots, sliced
- 1 cup Onion, chopped
- 1 cup Peanuts, roasted
Heat the oil in a large pot over medium heat.
Add the chicken and cook until browned.
Stir in the curry paste and cook for another minute.
Add the coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a boil.
Add the potatoes, carrots, and onion. Reduce heat and simmer until vegetables are tender.
Stir in the peanuts and cook for another 5 minutes.
Serve hot with rice.
