Ingredients

  • 4 cups Vegetable Broth
  • 2 tablespoon Miso Paste
  • 1 cup Coconut Milk
  • 1 tablespoon Red Curry Paste
  • 1 cup Sliced Mushrooms
  • 1 cup Diced Tofu
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 tablespoon Chopped Cilantro
  • 1 teaspoon Grated Ginger
  • 2 cloves Minced Garlic

Instructions 

  1. 1. In a pot, bring the vegetable broth to a boil.
  2. 2. Add the miso paste, coconut milk, and red curry paste. Stir well.
  3. 3. Add the mushrooms, tofu, soy sauce, lime juice, cilantro, ginger, and garlic. Simmer for 10-15 minutes.
  4. 4. Serve hot and enjoy!
