Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 cups Mushrooms, sliced
  • 1 cup Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 teaspoon Sugar
  • 1 cup Bell Peppers, sliced
  • 1 cup Snow Peas
  • ¼ cup Fresh Basil, chopped

Instructions 

  1. Heat the oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and ginger, cook for another minute.
  4. Add the sliced mushrooms and cook until they start to soften.
  5. Stir in the red curry paste and cook for another minute.
  6. Pour in the coconut milk, soy sauce, lime juice, and sugar. Stir well.
  7. Add the bell peppers and snow peas, cook until tender.
  8. Garnish with fresh basil before serving.
