Thai Mussel Recipe
A delicious and easy Thai mussel recipe with a spicy, aromatic broth.

- 2 lbs mussels cleaned and debearded
- 1 tablespoon vegetable oil
- 3 cloves garlic minced
- 1 tablespoon ginger minced
- 2 cups coconut milk
- 2 tablespoon red curry paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 cup chicken broth
- 1 bunch cilantro chopped
Heat oil in a large pot over medium heat. Add garlic and ginger, sauté until fragrant.
Add red curry paste and cook for another minute.
Pour in coconut milk, chicken broth, fish sauce, and lime juice. Bring to a simmer.
Add mussels, cover, and cook until mussels open, about 5-7 minutes. Discard any that do not open.
Garnish with chopped cilantro and serve hot.
