Instructions
Heat the oil in a large pot over medium heat. Add the garlic and ginger, and cook until fragrant.
Add the red curry paste and cook for another minute.
Pour in the coconut milk and chicken broth, and bring to a simmer.
Add the mussels, cover the pot, and cook until the mussels open, about 5-7 minutes.
Stir in the fish sauce and lime juice. Garnish with fresh cilantro before serving.
