Ingredients 

Salad Ingredients

  • 200 g rice noodles
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup cabbage, shredded
  • ¼ cup cilantro, chopped
  • ¼ cup green onions, chopped
  • ¼ cup peanuts, chopped

Dressing Ingredients

  • ¼ cup lime juice
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha optional

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
  2. 2. In a large bowl, combine the cooked noodles, carrot, bell pepper, cabbage, cilantro, green onions, and peanuts.
  3. 3. In a small bowl, whisk together the lime juice, soy sauce, fish sauce, brown sugar, sesame oil, and sriracha (if using).
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for up to 2 hours before serving.
