Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 2 cups Cooked chicken, shredded
  • 1 Red bell pepper, thinly sliced
  • 1 Carrot, julienned
  • ½ cup Cilantro, chopped
  • ¼ cup Peanuts, chopped

Dressing

  • ¼ cup Soy sauce
  • 2 tablespoon Lime juice
  • 1 tablespoon Fish sauce
  • 1 tablespoon Honey
  • 1 tablespoon Sesame oil
  • 1 clove Garlic, minced

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a large mixing bowl, combine the cooked noodles, chicken, bell pepper, carrot, cilantro, and peanuts.
  3. 3. In a small bowl, whisk together the soy sauce, lime juice, fish sauce, honey, sesame oil, and garlic to make the dressing.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
