Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 1 tablespoon Vegetable oil
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 tablespoon Red curry paste
  • 400 ml Coconut milk
  • 500 ml Chicken broth
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 200 g Chicken breast, sliced
  • 1 cup Bean sprouts
  • 1 Red chili, sliced Optional
  • 1 handful Cilantro, chopped

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. Heat the vegetable oil in a large pot over medium heat. Add the garlic and onion, and cook until softened.
  3. 3. Stir in the red curry paste and cook for another minute.
  4. 4. Add the coconut milk, chicken broth, fish sauce, and lime juice. Bring to a simmer.
  5. 5. Add the sliced chicken breast and cook until the chicken is cooked through.
  6. 6. Add the cooked rice noodles and bean sprouts to the pot. Stir to combine.
  7. 7. Serve the soup hot, garnished with sliced red chili and chopped cilantro.
