Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 1 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 2 cups Chicken Broth
  • 1 lb Chicken Breast, sliced
  • 1 cup Sliced Bell Peppers
  • 1 cup Snow Peas
  • 2 tablespoon Fish Sauce
  • 1 tablespoon Lime Juice
  • 1 cup Basil Leaves

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. Stir in the red curry paste and cook for another minute.
  3. Add the coconut milk and chicken broth, and bring to a simmer.
  4. Add the chicken and cook until no longer pink.
  5. Stir in the bell peppers, snow peas, fish sauce, and lime juice. Cook until vegetables are tender.
  6. Remove from heat and stir in the basil leaves. Serve hot.
