  • 1 lb Chicken Breast cut into bite-sized pieces
  • ½ cup Peanut Butter creamy
  • 1 cup Coconut Milk
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice freshly squeezed
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Vegetable Oil
  • 1 teaspoon Red Pepper Flakes
  • 1 tablespoon Brown Sugar

Instructions 

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. In a mixing bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, garlic, ginger, red pepper flakes, and brown sugar until smooth.
  4. Pour the peanut sauce over the cooked chicken in the skillet. Stir to coat the chicken evenly.
  5. Simmer for 5-10 minutes, allowing the sauce to thicken and flavors to meld.
  6. Serve hot over rice or noodles, garnished with chopped peanuts and fresh cilantro if desired.
