Ingredients 

Main Ingredients

  • 1 cup Jasmine rice
  • 1 lb Chicken breast cut into bite-sized pieces
  • 1 tablespoon Vegetable oil
  • 1 cup Coconut milk
  • ½ cup Peanut butter creamy
  • 2 tablespoon Soy sauce
  • 1 tablespoon Lime juice freshly squeezed
  • 1 tablespoon Brown sugar
  • 2 cloves Garlic minced
  • 1 teaspoon Ginger grated
  • 1 teaspoon Red chili flakes
  • 2 tablespoon Chopped peanuts for garnish
  • 2 tablespoon Chopped cilantro for garnish

Instructions 

  1. 1. Cook the jasmine rice according to package instructions.
  2. 2. In a skillet, heat the vegetable oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. 3. In a mixing bowl, whisk together the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, garlic, ginger, and red chili flakes until smooth.
  4. 4. Pour the peanut sauce over the cooked chicken in the skillet. Simmer for 5-10 minutes, until the sauce thickens.
  5. 5. Serve the peanut chicken over the cooked jasmine rice. Garnish with chopped peanuts and cilantro.
