Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoon Red curry paste
  • 1 can Coconut milk
  • ½ cup Peanut butter
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 cup Vegetables (e.g., bell peppers, carrots), chopped
  • ¼ cup Fresh cilantro, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger, and cook for another 2 minutes.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Add the coconut milk, peanut butter, soy sauce, and lime juice. Stir until well combined.
  5. Add the chopped vegetables and bring to a simmer. Cook until the vegetables are tender, about 10-15 minutes.
  6. Garnish with fresh cilantro and serve hot.
